This easy Pumpkin Granola Recipe is perfect to add a little “Fall” to your yogurt parfait or to have as a healthy snack.
I ran out of my homemade granola last week and needed another batch to have with my yogurt parfait afternoon snack.
In keeping with my Fall baking lately, and the love of everything pumpkin and spices, I decided to make Pumpkin Granola. It is certainly a favorite now!
If you have never made your own granola, it is really simple. Instead of spending $3.99 for a little bag every week, this is another easy way to save a little more in your grocery budget too.
INGREDIENTS
3 cups rolled oats
1 cup chopped pecans
1 tsp. cinnamon
1/4 tsp. ground ginger
1/4 tsp ground cloves
1/4 tsp nutmeg
1/3 cup melted coconut oil
1/3 cup maple syrup
1/4 cup pumpkin puree
1 tsp vanilla extract
1/2 cup raisins
1/2 cup of pumpkin seeds, optional
DIRECTIONS
Preheat oven to 300 degrees F.
Mix the oats, pecans, cinnamon, nutmeg, cloves and ginger together in a medium sized bowl.
In a small bowl, mix the pumpkin puree, maple syrup, coconut oil, and vanilla extract together.
Then, pour the liquid mixture over the oats mixture and stir to evenly coated.
Spread everything out on a baking sheet.
Bake for about 45-50 minutes or until it’s dry.
Stir about every 10-15 minutes.
Cool completely and then stir in the raisins and pumpkin seeds.
Store in an airtight container.
